Make It From Scratch

Forget supermarket bought herb and spice mixes with all their added preservatives, artificial flavours and colours, it's so easy to make your own and it doesn't take a lot of time.

Taco Mix

1 teaspoons chilli powder
1 teaspoon cayenne (more or less for heat)
1 teaspoon garlic powder
1 teaspoon oregano
2 teaspoons paprika
2 tablespoons cumin
½ teaspoon sea salt (or ¼ teaspoon cooking salt)
½ teaspoon ground black pepper

Pour all of the ingredients into a bowl and mix. I would quadruple the recipe! That way you only have to make it once in a while. 

Stroganoff Mix


1 tablespoons tomato paste
2 tablespoons Dijon mustard
2 teaspoons smoked paprika
2 teaspoons Worcestershire sauce
250ml (1 cup) beef stock
1 brown onion, halved and thinly sliced
2 garlic cloves, crushed

1 teaspoon fresh thyme or ¼ teaspoon dried thyme
125ml beef stock and 1/4 cup plain or cornflour combined
1/4 cup sour cream (more or less depending on your own taste)

Heat 2 teaspoons of olive oil in frying pan over medium heat. Add onion and garlic to pan and cook until onion is soft. 

Add 1 cup stock, Worcestershire sauce, tomato paste, Dijon mustard, paprika and thyme to the pan, stir to combine and bring to a boil. Reduce heat and simmer for five minutes.  Increase heat and add combined beef stock and flour to pan, stirring constantly until sauce has thickened.  Reduce heat to low, and cook for a further 2 minutes.  Just before serving, add sour cream and stir through, simmer for a few minutes until warmed. Serve with pasta of your choice or rice.
